Chicken pot pie! Chicken pot pieeeeeeee!

Sorry, that was a line from an old episode of Just Shoot Me. But I did make Chicken Pot Pie last night. I have never made one before, and I don't think I have even eaten one in over 20 years. But for some reason it sounded really good. I modified a few recipes I found on the internet, and came up with quite a tasty treat. (I love that I love my cooking! haha) Franco even liked it, which suprised me. (You can see my sloppy egg whites that I brushed on top...I did it after I put it in the oven, so I didn't have very good angle.)



Here is my modified recipe:
INGREDIENTS:
1 pound skinless, boneless chicken breast halves - cubed
1 bag frozen veggies - broccoli, cauliflower, carrots
1/3 cup butter
1/3 cup chopped onion
1/3 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon celery salt
1 3/4 cups chicken broth (I used 1 3/4 cups water with one boullion cube)
2/3 cup milk
2 (9 inch) unbaked pie crusts (I used pasta brisee')



DIRECTIONS:
1. Preheat oven to 425 degrees F (220 degrees C.)
2. Brush egg white on bottom pie crust and bake for 7 minutes (keeps it from getting soggy)
3. Prepare veggies as directed (I boiled for 6 minutes in water with half of a boullion cube). Set aside.
4. In a saute pan, cook chicken with salt, pepper and thyme. Set aside when finished.
5. In the saucepan over medium heat, cook onions in butter until soft and translucent. Stir in flour, salt, pepper, and celery salt. Slowly stir in chicken broth and milk. Simmer over medium-low heat until thick. Remove from heat and set aside.
6. Place the chicken and veggies in prepared bottom pie crust. Pour hot liquid mixture over. Cover with top crust, seal edges. Make several small slits in the top to allow steam to escape.
7. Bake in the preheated oven for 30 to 35 minutes, or until pastry is golden brown and filling is bubbly. Cool for 10 minutes before serving.

I did not have potatoes, but I think cubed potatoes added to the saucepan with veggies would be really good addition. Enjoy - this is down home comfort food, folks!
In addition to my baking, I made a couple of more hats this week. I hope it is cold this winter! hehe
